Chicken Sausage Hash
Put a healthier spin on a traditional hash by using chicken sausage and sweet potatoes.
Equipment

- Knives
- Cutting board
- Vegetable peeler
- Large frying pan
- Small frying pan
- Cooking utensils
Ingredients
- 1 tablespoon butter
- 3 tablespoons vegetable oil divided
- 1 lb sweet chicken sausage
- 2 medium sweet potatoes
- 1 1/2 cups diced onion
- salt, pepper, and crushed red pepper to taste
- 1 egg per serving
Instructions
- Cut chicken sausage into bite-sized pieces. Set aside.
- Place diced sweet potatoes a pot and cover with cold, salted water. Bring to a boil and cook for 8 minutes.
- Sauté diced onion in vegetable oil for 3-5 minutes until translucent; season with salt and pepper
- Drain sweet potatoes and pat dry and add to onions, season again with salt and pepper
- Add 1 tablespoon butter
- Cook until potatoes have reached desired color (about 5-10 minutes). Stir often.
- In a separate small frying pan brown and cook diced chicken sausage in oil
- Add crushed red pepper to taste
- Add cooked sausage and oil to skillet
- Toss and cook 3-5 minutes more
- Enjoy as is or top with a fried egg, cooked in the same pan used for sausage
