Servings: 15 rolls
Equipment
- Stand mixer
- Measuring utensils
- Large bowl
- Small bowl
- 9x13 pan
- Parchment paper
- Dish towel
Ingredients
- 3 1/2 cups all-purpose flour
- 2 1/2 tsp instant yeast
- 1 cup whole milk
- 7 tablespoons softened butter divided
- 1/4 cup water
- 1 tsp salt
- 2 tablespoons sugar
- 1 egg
Instructions
- Lightly beat one egg in a small bowl. Set aside. Grease a large bowl with a scant tablespoon of melted butter. Line a 9x13 pan with parchment paper. Set aside.
- Mix flour, salt, yeast, and sugar in a stand mixer.
- Heat milk, water, and softened butter in the microwave for one minute. Stir, then heat in 10-second intervals in the microwave until the temperature reaches 110 degrees Fahrenheit.
- Turn the mixer on low speed with the hook attachment. Add half of the milk mixture to the flour mixture. Next, add the beaten egg. Then add the remaining liquid. Stop and scrape down the bowl as needed.
- When the mixture comes together knead on speed 2 of the stand mixer for 3 three minutes.
- Turn the dough out into a greased bowl. Cover with a dish towel and let the dough rise for two hours. Try to keep the bowl in a warm place.
- After two hours, punch down and lightly knead a few times in the bowl. The dough will be greasy from the butter. Pinch off dough and roll into fifteen equal balls. Place in a 9x13 lined with parchment paper. Cover with a dish towel for 25 minutes to rise again.
- Bake the dinner rolls at 350 for 20-25 minutes. Melt remaining butter and brush over rolls before serving.
Notes
If it's chilly in your house, try keeping the rising dough on top of a preheating oven.
