- 1.25 lbs ground beef
- 1 tbsp olive oil
- 1 small to medium onion diced and sautéed
- 3 cloves garlic minced
- 1 1/2 tsp salt
- 1 1/2 tsp pepper
- 1 tsp onion powder
- 1 tsp garlic powder
- 1/3 cup Italian bread crumbs
- 1 tsp parsley
- 2 tbsp ketchup plus 1/4 cup, reserved
- 2 slices white sandwich bread soaked in about 1 cup of milk
- 1 egg
Place white bread in a small bowl with milk. Set aside.
Dice and sautée onion in olive oil over medium heat for about 5-8 minutes. Set aside to cool.
Mix ground beef and all other ingredients in a large mixing bowl with clean hands. Add onions once cooled.
Place meat mixture onto a parchment paper-lined baking sheet. Mold into loaf form. Top with about 1/4 cup of ketchup. Brush evenly to coat.
Bake at 375 degrees Fahrenheit for 30-40 minutes, or until internal temperature reaches 160 degrees Fahrenheit.
Let meatloaf rest for 10 minutes before serving.
