Mushroom Rice Pilaf

- 1 tbsp olive oil
- 1/2 cup diced yellow onion
- 1 cup diced mushrooms White or Bella
- 1 clove minced garlic
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 cup long-grain white rice
- 1 3/4 cups beef broth
- 1 tbsp salted butter
Dice onion and mushrooms. Mince garlic.
Heat olive oil in saucepan over medium heat. Add mushrooms, onions, salt, and pepper. Cook until onions are translucent and mushrooms are soft, about 3-4 minutes. Add in garlic and cook for another minute.
Add rice to pan and stir to combine. Raise heat to high. Add beef broth.
Stir mixture until it comes to a boil. Cover and cook on low heat for 18 minutes.
Remove pan from heat and keep covered for an additional 5 minutes. Fluff with a fork and stir in butter before serving.
