Preheat over to 400 degrees Fahrenheit
Wash and cut potatoes into small one inch pieces
Put potatoes in a small pot on the stovetop. Cover with cold, salted water. Bring to a boil and let cook for 10 minutes.
Meanwhile, whisk remaining ingredients in a bowl. I suggest starting with 1/4 tsp of salt and adding more to taste later if needed.
After boiling for 10 minutes, remove the potatoes with a slotted spoon and add to the mixing bowl.
Toss with a spatula to evenly coat the potatoes. Then, spread evenly on a baking sheet.
Bake at 400 degrees Fahrenheit for 25 minutes. Taste and season with more salt if needed. Garnish with extra parsley thyme to serve.
