Equipment

Ingredients

  • 4-5 Yukon Gold potatoes
  • 2 tablespoons melted butter
  • 1 tablespoon vegetable oil
  • 1/4-1/2 tsp salt
  • 1/4 tsp pepper
  • 1/8 tsp garlic powder
  • 1/8 tsp of oregano
  • 1/8 tsp parsley plus more for garnish
  • 1/8 tsp dried thyme plus more for garnish
  • pinch of cayenne

Instructions

  • Preheat over to 400 degrees Fahrenheit
  • Wash and cut potatoes into small one inch pieces
  • Put potatoes in a small pot on the stovetop. Cover with cold, salted water. Bring to a boil and let cook for 10 minutes.
  • Meanwhile, whisk remaining ingredients in a bowl. I suggest starting with 1/4 tsp of salt and adding more to taste later if needed.
  • After boiling for 10 minutes, remove the potatoes with a slotted spoon and add to the mixing bowl.
  • Toss with a spatula to evenly coat the potatoes. Then, spread evenly on a baking sheet.
  • Bake at 400 degrees Fahrenheit for 25 minutes. Taste and season with more salt if needed. Garnish with extra parsley thyme to serve.
