Mushroom Rice Pilaf
This savory side dish goes well with just about any meal.

- Measuring and cooking utensils

Ingredients
- 1 tbsp olive oil
- 1/2 cup diced yellow onion
- 1 cup diced mushrooms White or Bella
- 1 clove minced garlic
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 cup long-grain white rice
- 1 3/4 cups beef broth
- 1 tbsp salted butter
Instructions
- Dice onion and mushrooms. Mince garlic.
- Heat olive oil in saucepan over medium heat. Add mushrooms, onions, salt, and pepper. Cook until onions are translucent and mushrooms are soft, about 3-4 minutes. Add in garlic and cook for another minute.
- Add rice to pan and stir to combine. Raise heat to high. Add beef broth.
- Stir mixture until it comes to a boil. Cover and cook on low heat for 18 minutes.
- Remove pan from heat and keep covered for an additional 5 minutes. Fluff with a fork and stir in butter before serving.
