Mushroom Rice Pilaf

Ingredients

  • 1 tbsp olive oil
  • 1/2 cup diced yellow onion
  • 1 cup diced mushrooms White or Bella
  • 1 clove minced garlic
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 cup long-grain white rice
  • 1 3/4 cups beef broth
  • 1 tbsp salted butter

Instructions

  • Dice onion and mushrooms. Mince garlic.
  • Heat olive oil in saucepan over medium heat. Add mushrooms, onions, salt, and pepper. Cook until onions are translucent and mushrooms are soft, about 3-4 minutes. Add in garlic and cook for another minute.
  • Add rice to pan and stir to combine. Raise heat to high. Add beef broth.
  • Stir mixture until it comes to a boil. Cover and cook on low heat for 18 minutes.
  • Remove pan from heat and keep covered for an additional 5 minutes. Fluff with a fork and stir in butter before serving.
