Roasted Potatoes

Ingredients
- 4-5 Yukon Gold potatoes
- 2 tablespoons melted butter
- 1 tablespoon vegetable oil
- 1/4-1/2 tsp salt
- 1/4 tsp pepper
- 1/8 tsp garlic powder
- 1/8 tsp of oregano
- 1/8 tsp parsley plus more for garnish
- 1/8 tsp dried thyme plus more for garnish
- pinch of cayenne
Instructions
- Preheat over to 400 degrees Fahrenheit
- Wash and cut potatoes into small one inch pieces
- Put potatoes in a small pot on the stovetop. Cover with cold, salted water. Bring to a boil and let cook for 10 minutes.
- Meanwhile, whisk remaining ingredients in a bowl. I suggest starting with 1/4 tsp of salt and adding more to taste later if needed.
- After boiling for 10 minutes, remove the potatoes with a slotted spoon and add to the mixing bowl.
- Toss with a spatula to evenly coat the potatoes. Then, spread evenly on a baking sheet.
- Bake at 400 degrees Fahrenheit for 25 minutes. Taste and season with more salt if needed. Garnish with extra parsley thyme to serve.
